A chef from 28 North Gastropub in Viera was invited to attend the Markon/Mushroom Council Blended Burger Chef Summit Recipe Contest. Located in Monterrey, California, the contest brings together some of the best burger chefs in the country.
Chef Kyle Hash was chosen for his mushroom burger recipe. Out of hundreds of competition entrants, his recipe made the cut. The contest is an effort to make a sustainable burger that does not use as much meat in the patty. For a recipe to be allowed in the competition, it must use at least 25% mushroom. Mushrooms were chosen because they are more sustainable than meat and blend well with the other burger ingredients.
Hash loved having an opportunity to represent himself and his food to a different place. Since 28 North has opened in February, Hash has been the head chef. Before that, he was the head chef at Pizza Gallery and Grill.
